Ingredients for Chole:

1)  1 cup dried chickpeas, soaked overnight.

2)  1 large onion, chopped.

3)  2-3 green chilies, slit.

4)  1 inch ginger, grated.

5)  6-8 cloves garlic, minced.

6)  2 tbsp tomato paste.

7)  1 tsp cumin seeds.

8)  1 tsp coriander powder.

9)  1/2 tsp turmeric powder.

10) 1 tsp red chili powder.

11) 1 tsp garam masala powder.

12) 1 tsp amchur powder (dried mango powder).

13) Salt to taste.

14)  2 cups water.

15) 1 tbsp ghee or oil.


Ingredients for Bhature:

1)  2 cups all-purpose flour

2)  1/2 cup yogurt

3)  1/4 tsp baking soda

4)  1/4 tsp baking powder 

5)  1/2 tsp salt

6)  1 tbsp ghee or oil and Warm water as needed.

Instructions for Chole: 

Cook the Chickpeas: 

Pressure cook the soaked chickpeas with 2 cups of water, 1 tsp salt, and 1 tsp cumin seeds for 7-8 whistles. Let the pressure release naturally.

  Sauté the Aromatics: Heat ghee or oil in a deep-bottomed pot. Add cumin seeds, chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.

  Add Spices: Add tomato paste, coriander powder, turmeric powder, red chili powder, garam masala powder, and amchur powder. Stir well and cook for a few minutes until the raw smell disappears.

  Combine Chickpeas and Gravy: Add the cooked chickpeas and their water to the masala. Stir well and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the gravy thickens and the flavors are well - combined.

  Adjust Taste: Taste and adjust salt and spices as needed.

Instructions for Bhature:

  Mix Dry Ingredients: In a large bowl, combine all-purpose flour, baking soda, baking powder, and salt.

  Add Wet Ingredients: Add yogurt, ghee, and warm water gradually to the dry ingredients. Knead into a soft, pliable dough.

  Rest the Dough: Cover the dough with a damp cloth and let it rest for 30 minutes.

  Roll and Fry: Divide the dough into equal portions. Roll each portion into a flat, round shape. Heat oil in a deep skillet or kadai. Gently slide the rolled bhaturas into the hot oil and fry until golden brown and puffed up on both sides.

Serving Suggestion:

Serve the hot, spicy chole with the fluffy bhature. Garnish with chopped coriander leaves and a squeeze of lemon juice. Enjoy this delicious, hearty meal!

Tips:

 For extra flavor, add a pinch of asafoetida (hing) to the chole masala.

 To make the bhature extra fluffy, add a little bit of yeast to the dough.

  Serve the chole bhature with a side of pickled onions or raita for a refreshing contrast.
